Question: What Are the Best Resources for Sample Good Manufacturing Practices (GMP)?

Answer: The USDA requires written Sanitation Standard Operating Procedures based on eight key sanitation conditions and practices. The FDA requires written Sanitation Standard Operating Procedures for juices but not for seafood.  Whether or not written operating procedures are required, and regardless of commodity, warehouses are required to monitor them and keep records.  The sanitation records must be reviewed, signed and dated within seven days.  (All eight key sanitation issues may not apply in a warehouse, but the warehouse should be able to explain why not).
